Waffles, The Answer is Always Waffles
From first glance, it might seem like I only want to be writing these blogs about food, which is half true, but I need to just get this out there. I love waffles. Waffles beat most breakfast foods for me and to date, I am on the hunt for the perfect waffle recipe.
I have spent many hours of quarantine honing my baking skills and took a particular liking for breakfast foods, waffles in particular, because they’re the best. All-in-all, I must’ve tried at least a dozen different recipes. All were good, mostly okay, or just plain ol’ decent. But, I think I may have found “the one”. They're soft on the inside and crunchy on the outside. The perfect waffle, if you will.

So, I present, my favorite waffle recipe (until I find a better one and this one can go rot):
This only makes enough for like one person, so double this if you’re really hungry or cooking for 2 people
This can be made perfectly with gluten free flour! I used my brother as a lab rat :-)
This recipe can be a little tedious, but trust the process
I found this recipe somewhere online, but I wrote it down so I don’t remember where it’s from :(
Ingredients
¾ cup flour
¼ cup cornstarch
1 tsp. baking powder
¼ tsp. salt
2 tsp. sugar
2 eggs (yolks and whites separated)
2 tbsp butter (melted)
1 tsp. vanilla extract
Directions
Heat your waffle iron!! Plug that baby in.
Mix your dry ingredients; flour, cornstarch, baking powder, salt, and sugar with a whisk
(If you want your batter to be more consistent, you can sift the flour and cornstarch, but it’s not necessary)
In a separate bowl, beat the egg yolks like they hit you first
Mix the milk, vanilla, and butter together with the beaten eggs
Whisk your egg whites until they’re foamy! (You need an electric whisk/mixer for this. If you try with your hands it just won’t work and you will be gravely disappointed)
Combine wet ingredients with the dry ones
Fold the egg whites in, but don’t over-mix or your waffles will fall flat!
Cook those waffles by scooping some mixture and dumping that onto the waffle iron
Eat them!!
These are great with powdered sugar, syrup, and chocolate chips!
**If you want chocolate chip waffles, just add them in after folding in egg whites! Remember not to over-mix, though.

I don't really like breakfast, but out of all the breakfast foods, waffles are probably my favorite. You got me hungry and now I'm craving waffles! I'll definitely make these soon!! Thanks for the recipe:))

DeleteOf course you wrote about food again, in the nicest way possible no one is surprised. I'm glad your waffles turned out so perfect! I always get nervous about you and breakfast foods because both times you've made pancakes and I was there they were awful. I like my waffles with strawberries and whipped cream personally, but chocolate chips and syrup sounds good too.

DeleteI don't really ever east a formal breakfast, but I agree. I love waffles. They are my favorite breakfast food after the Swedish pancakes from the Pancake House.
ReplyDeleteI'm not much of a breakfast eater, but I do love waffles. To be honest though, I prefer pancakes because they're just so soft and smooth. If you've never tried red velvet pancakes, you're missing out!!! I'm sure you can also make red velvet waffles, probably tastes amazingggg!!
ReplyDeleteWaffles are just crispy pancakes and I'm not a fan. It'll do if I want a pancake, but its not the same.
